Extra Virgin Olive Oil

The extra virgin olive oil Pastorella is obtained exclusively from Ogliarola Garganica cultivation of our property and certified organic agriculture.

After being harvested by hand, the olives are pressed within 12 hours by mechanical cold extraction procedures and with a temperature not above 25 degrees centigrade. The low rotation regime of the liquid separation system and the absence of filtration processes lead to a finished product characterized by its low fluidity and almost no transparency.

Sweet and enveloping on the palate and soft and velvety, with an amber-green color and shades of yellow, it releases almond notes, field grass and artichoke; moderately fruity, it presents a notable overall balance.
